All salads are not created equal in kitchen...

Yup, it’s true! The #veganstarterpack includes a salad. Luckily for me my salads are far from #basic. My love for salad started long ago and since then I’ve constantly craved cold crispy greens, savory and sweet toppings, and creamy dressings.


I’ve gotten pretty creative with my salad combinations! Lettuce check it out some salad inspirations I kow you'll enjoy as much as I do....



Southwest Crispy Chick’n Salad

Okay, what’s not to love about sweet corn kernels, tender black beans, and crispy tortilla chips. Whichever protein you choice spice it up with a little taco seasoning and you’re all set.


Sweet Chili Asian salad

I love a great Asian ZING! Something about the tangy sharp flavors you get from Asian inspired ingredients like ginger, cilantro, green onions, and edamame. The crispy sweet chili mushrooms was beyond simple. Just use my vegan crispy "chicky" mushroom recipe and your favorite bottle sweet chili sauce.


BBQ Tofu & Pineapple &Salad

Something about the savory & sweet with a little heat. If you’ve never tried the whole “bbq and pineapple” combo you’re missing out. Do what you’d like with the base of this salad, the show stopper is marinated air fried tofu tossed in hickory bbq sauce and topped with pineapple chunks.







Teriyaki Chick’n

Sweet and sour chick’n strips go well with anything. Plus the "quickled" (quick + pickled) cabbage I made was the extra crunch I so desperately crave. As an effort to keep things light with my high #plantprotein chick'n strips I went lighter and did the salad thing. Same simple goodness.








 

Toppings to try:

Try pickled ANYTHING! The tangy and slightly vinegary flavor will spark your taste buds. Pickled ginger, pickled cabbage, or pickled sweet peppers are all delicious.


Try fatty nuts or seeds. The good fats will ensure you're getting in those needed calories because salads can be a bit "light" in calorie density in plus we can all benefit from extra omegas and

 

The Original & Remix

Once you’ve had one salad, you’ve had them all right? WRONG! I took the classic elements for a salad: tomatoes, greens, tangy onions, crisp mixed greens, and citrus. While you can keep things simple you don’t have to be basic. My "GOLD MINE" dressings remixes the original salad every time.


Cannellini Bean salad

If "plantbased whole foods" was a salad... this herbaceous beauty is inspired from this amazing Italian restaurants that serves chilled cannellini beans seasoned with sea salt, olive oil, and red onions. Well I skipped the EVOO and went avocado then added super food, kale and enjoyed this salad both warm and chilled. The key to these tender beans is sea salt, oregano, and garlic powder.



What's my favorite dressing, you ask? It’s the one I make in my kitchen.

Gold Mine dressing:

¼ cup nutritional yeast

3 tbsp water

½ tbsp apple cider vinegar

1 tbsp mustard

1 tsp garlic powder

1 tsp onion powder

¼ tsp sea salt or ½ tsp liquid aminos

Combine well and add to your salad, wrap or sandwich.
